The perfect dish to prepare for those busy week nights!
Hey friends! As mentioned in a previous meatloaf recipe ( honey chile’ I have many!), my husband is a meatloaf lover. He request meatloaf all the time. Although I don’t mind making it, sometimes it can be a little time consuming. You know- cutting, dicing, mixing, and etc. Well recently I’ve been making meatloaf freezer meals. I simply mixed everything, place it into a dish, then I freeze it until I’m ready to use it!
As mentioned, I have a ton of meatloaf recipes. I usually use whatever I have on hand at the time. On this particular night I had a ton of grape tomatoes, so I placed them into the food processor and pulsed them a few times. Usually I use salsa, but the grape tomatoes worked fine. Also for a filler I chose to use quick oat this time around. If you have followed my blog for a while, you know that I have used bread, and even rice in the past. Whatever you want to use, USE. I don’t have any real restrictions when it comes to meatloaf.
Here’s what I used
- 2 lbs ground beef
- 1 cup quick oats
- 1/2 cup crushed roma tomatoes
- 1 medium sized onion, diced
- 1 large orange bell pepper
- 1 tbsp Mrs. Dash original seasoning
- 3 tsp garlic powder
- 1 tsp onion powder
- 2 large eggs
- 3 green onions, chopped
I started of by placing all of my ingredients into a large mixing bowl
I mixed all of the ingredients using my hands, but you can use a kitchen utensil if you choose.
I divided the meatloaf mixture into two, then I placed them into two small rectangle shaped aluminum pans that I bought from the Dollar Tree ( They pans came in a pack of 3 with lids).
I poured a nice amount of barbecue sauce on top. FYI, you can use catsup as well!
I sprinkled some dry parsley on top to add some color.
Place the lid on top, and label the dish with WHAT IT IS and the instructions.
*Bake on 375 F, for 45 minutes
This meatloaf can stay in the freezer for several months!
