Frugal Mommy Meatloaf Recipe

Meatloaf is definitely a family favorite in my household. I love making it because it’s easy and can be versatile, and my guys like it because it always tastes great. I’ve shared a couple meatloaf recipes with you all in the past, and I’d like to share this one with you all as well.

Like myself, many of you are busy individuals that are on a budget. We have no time for fancy eats every day. Sometimes we just want something that is good, and to be quick frank- CHEAP to make! I’ve put together this awesome meatloaf that you can whip together in minutes, and enjoy for days. This recipe makes TWO big meat-loaves so there will be plenty to go around! Frugal Mommy Meatloaf Recipe


2 lbs Ground Beef

1/2 cup chopped onion

1 cup cook white rice

1 cup quick oats

8 oz cheddar cheese, cubed

1 green bell pepper, chopped

1 roma tomato,chopped

1/3 cup milk

2 eggs

1/4 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

2 tsp seasoning salt

1/4 cup ketchup


  1. This recipe makes 2 loaves
  2. Place the ground beef into a a large bowl.
  3. Now add all of the other ingredients as well, except the ketchup.
  4. Use your hands or a kitchen utensil to mix the ingredients.
  5. Stuff the meat into a loaf man, then empty the meat into you baking dish.
  6. We only used the loaf pan to form our meatloaf!
  7. Slather the ketchup on top of the meatloaf as well as the sides.
  8. Cover the meatloaf, and bake on 375 for 35 minutes.
  9. Serve!
